Creole Salmon filets
6-8 oz pieces Skinless Salmon Filet (4 each)
3-4 Tbsp Olive oil
1 Tbsp Zatarains Creole Seasoning
1/4 cup Light Brown Sugar
Coat salmon with olive oil. Combine Creole seasoning and brown sugar and sprinkle liberally over both sides of salmon. Let stand at room temperature for 30 minutes, or while preheating grill.
Grill over medium heat for 10 minutes per inch (measured at thickest part of fish), turning half way through cooking time, or until salmon just flakes apart. Avoid overcooking.
This dish is great served with grilled asparagus, coated with olive oil and the same seasoning, and grilled for about the same time as salmon turning to cook evenly.
